Spiced Apple + Chocolate Loaf

120 grams unsalted butter, melted

2 large apples, peeled and diced (pears work too)

1 cup brown sugar, loosely packed

2 eggs

1 tablespoon apple cider vinegar

1 1/4 cup wholemeal spelt flour

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon allspice

1/2 teaspoon salt

a big handful of sultanas or raisins

a big handful of sunflower seeds

a big handful of pumpkin seeds

2 big handfuls of dark chocolate, chopped

Preheat the oven to 160°C. Line a loaf tin with baking paper.

Combine the butter, apples, brown sugar, eggs and apple cider vinegar.

Sieve together the flour, cocoa, baking soda, cinnamon, nutmeg, allspice and salt. Add the liquid ingredients, along with the sultanas, seeds and chocolate, and mix until just combined.

Spread the mixture into a loaf tin. Bake for 50-60 minutes, or until a skewer comes out clean when poked into the loaf.
