Vegetable Soup

Vegetable Soup

1-2 tablespoons olive oil

1 onion, chopped

1 leek, sliced

a couple of cloves of garlic, finely chopped

3 bay leaves

sprig or thyme, stalks removed

1/4 pumpkin, peeled and chopped

3 small kumara, washed and chopped

1 parsnip, washed and chopped

1/2 cup spilt red peas

boiling water

pinch of salt and pepper

Heat up the oil in a large saucepan, then add the onion, leek and garlic and cook until the onions are soft. Mix through the herbs. Add the chopped vegetables and split peas, then cover over with boiling water. Simmer until the vegetables are cooked, about 30 minutes. Once the vegetables are cooked, whizz them up with a hand blender. If it is too runny, simmer for longer or if it is too thick add some water. Check the seasoning and you could add a tablespoon or two of peanut butter if you like. Serve with fresh bread or toast.

With this recipe you can use whatever vegetables combinations you like, this is just what we had to use.
